2007 Reserve
Cabernet Sauvignon

As our final 2010 release, the 2007 Reserve Cabernet is in many ways a perfect cap to a remarkable vintage. Bottled from very special "reserve only" Cabernet barrels, we believe this wine represents the best of Washington Cabernet.

Impressive for its density, this vintage is totally unfined and unfiltered. Undeniably young, it has an immense nose of mocha and chocolate along with a red currant brightness. The palate showcases this Cabernet's age-worthiness. It's full bodied with chewy, tight tannins. Displaying deft balance, it has a great roundness and a long expanded finish. Good medium ruby.  Reserved aromas of dark berries, kirsch, licorice and minerals.  Juicy but youthfully tight; a bit higher-toned than the Indomitable but also less expressive today.  In fact, with its very primary dark fruit and bitter chocolate flavors this comes across as a bit austere today.  In creating this reserve bottling, winemaker Sean Boyd selects lots for their structure and aging potential
